for the oat base

  • 100g oat flour
  • 130g rolled oats
  • 1 tsp baking powder⁠
  • 4 tbsp Sweet Freedom VANILLA SYRUP
  • 1/2 cup of melted coconut oil⁠
  • 1 tsp lemon zest

for the fruit topping

  • 100g frozen blueberries
  • 1 tbsp lemon juice
  • 1 tsp lemon zest⁠
  • 1 tbsp chia seeds⁠


  1. Preheat your oven to 180C (or 160C for fan)⁠ and line your baking tin.⁠
  2. Mix your ingredients for the fruit toppings together in a saucepan on a medium heat and cook for 5 minutes.
  3. Take off the heat and put it to one side.⁠
  4. Mix your dry oat base ingredients together in a large bowl, then fold in the VANILLA SYRUP, coconut oil, and lemon zest.⁠
  5. Transfer 3/4 of your oat mix to the baking tin.
  6. Smooth and press down with the back of a spoon.⁠
  7. Pour your berry mix onto the base and spread out evenly.⁠
  8. Sprinkle the rest of your oats on top and cook for 30-35 minutes.⁠
  9. Allow to cool, and cut into bars.⁠
